Secrets For The Eggless Chocolate Cake
Test the baking soda before use:
First of all, use good quality baking soda. To test it, add 2tbsp of vinegar or lemon juice to a bowl and add half tsp baking soda and stir. If it is fresh then it will bubble and fizz immediately. Now if it doesn't do so that means it is not good and you must replace it with a new one. So, if the baking soda is not good then the cake will turn flat and will not be spongy.
Quantity of soda:
Do not increase the quantity of soda as it may leave a bitter taste. So take the measurements carefully.
Vinegar:
Use good quality vinegar, and If possible then use apple cider vinegar. So, good quality acidic vinegar will help the baking soda to react well and will make the cake light and spongy.
Vanilla Flavour:
I use vanilla extract for most of my recipes, but you can also use vanilla powder or vanilla essence. ( Vanilla Extract & Vanilla Essence are not the same). Vanilla essence is an artificial flavoring agent so you have to use a few drops in the recipe.
